Shavige uppitu

All you need

Wheat sevai (Shavige) – 2 cups

Carrot,potato, capsicum, beans ( any other vegetables of choice)

onion -1

green chillies -1 to 2

ginger one small piece

1 spring of curry leaves

turmeric powder – 1/2 tsp

dalchini or cinnamon – 2 pieces

star -1 small

Clove – 4

peanuts – 1 tbspn

mustard – 1 tsp

cumin – 1 tsp

lemon juice – 2 tsp

salt and sugar to taste.

method: fry shavige lightly, care must be taken not to over fry which changes the taste. Remove from fire keep aside.Heat oil add cinnamon,bay leaf, lavang, star, saunf fry for a few secs, add peanuts let it get light brown now add cumin and mustard. As the mustard splutters add the curry leaves. Add green chilli, ginger let it get slightly fried now add onion and fry until light pink in color. Add turmeric and the vegetables (carrot, potato, beans) let it fry for few minutes. Now add water ( 1:2.5) of shavige. As the water is boiling add salt and sugar to taste. You can add 1-2 tsp of lemon juice at this time. When water comes to boil add ( shredded cabbage,capsisum i usually add these at this time as they do not get sogy or loose taste) you can even add this after adding sevai for a crunchy taste of vege. Now time to add the long waited shavige and stir it and now almost all water would have been absorbed the sevai would still be sticking with each other. Sim it for 2 minutes, turn off fire and garnish with coriander leaves.
